Ingredients

  • scallions
  • garlic clove
  • water
  • dried yeast
  • sugar
  • all-purpose flour
  • salt
  • all-purpose flour
  • sesame seeds, white
  • salt

Instructions

  1. Place 2 scallions into mixing bowl and chop 3 sec/speed 8. Transfer chopped scallions to a bowl and set aside.
  2. Place 4 scallions, garlic and oil into mixing bowl and chop 3 sec/speed 8. Scrape down sides of mixing bowl with spatula. Place simmering basket onto mixing bowl lid and cook 5 min/120°C/speed 1. Transfer scallion-garlic oil to a bowl and allow to cool.
  3. Place water, yeast and sugar into mixing bowl and heat 2 min/37°C/speed 1.
  4. Add flour, reserved chopped scallions and salt and mix 5 sec/speed 5. Scrape down sides of mixing bowl with spatula and knead Dough /5 min. Let rise in the mixing bowl until doubled in size (approx. 60-90 min.).
  5. Place water into mixing bowl. Set Varoma with rolls into position, secure Varoma lid and start Kettle /70°C. Allow to rise in covered Varoma until doubled in size (approx. 25-30 min.). Meanwhile, make the dipping sauce. In a small bowl, mix together shaoxing cooking wine, sichuan peppercorn oil​, sesame oil​, sugar​ and 1 pinch sesame seeds​​. Set aside until ready to serve.
