Steamed Sea Bream in Broth with Potatoes

Ingrediënten
- celery leaves
- fennel fronds
- garlic clove
- coriander seeds
- wholegrain mustard
- extra virgin olive oil
- freshly squeezed lemon juice
- fine sea salt
- ground black pepper
- celery stalk
Bereidingswijze
- Place celery leaves, fennel tips, 1 garlic clove, coriander seeds, mustard, 30 g olive oil, lemon juice, 2-3 pinches salt and 2-3 pinches ground black pepper in mixing bowl then blend 3 sec/speed 7. Transfer pesto to a bowl and set aside.
- Place celery stalks, fennel bulb and remaining 20 g olive oil in mixing bowl then chop 3 sec/speed 5. Sauté 3 min/120°C/speed 1. Meanwhile, place 1-2 Tbsp prepared pesto inside each sea bream and arrange them on Varoma tray.
- Add water and bay leaves. Place Varoma into position and weigh in potatoes then season with remaining 2 pinches salt. Insert Varoma tray and steam 25 min/Varoma//speed 1. Set Varoma aside.
