Ingrediënten

  • apple juice
  • light brown sugar
  • fresh root ginger
  • lime juice
  • fine sea salt
  • cider vinegar
  • ground cardamom
  • black peppercorns
  • dried fennel seeds
  • dried chilli flakes

Bereidingswijze

  1. Place apple juice, sugar, ginger, lime juice, salt, vinegar, cardamom, peppercorns, fennel seeds, chilli flakes, mustard powder, apple sauce, makrut lime leaves, garlic, star anise and cinnamon in mixing bowl and cook 25 min/120°C/speed 2. Strain sauce through simmering basket into a bowl and set aside.
  2. Preheat oven to 180°C and line a large roasting tin with baking paper.
  3. Place pork ribs in a single layer in prepared roasting tin and pour over reserved sauce. Cover with foil and set aside to marinate for 20 minutes.
  4. Roast for 1 hour 15 minutes (180°C). Towards the end of this time, light barbecue if using.
  5. Remove foil and continue to cook in oven or finish cooking on a barbecue for 15-20 minutes until sticky and golden brown. Serve warm.
