Ingrediënten

  • self-raising flour
  • bicarbonate of soda
  • ground cinnamon
  • ground mixed spice
  • ground ginger
  • unsalted butter
  • fresh root ginger
  • crystallised ginger
  • dark brown muscovado sugar
  • evaporated milk

Bereidingswijze

  1. Preheat oven to 180°C and line a large loaf tin (900 g/2 lb) with baking paper.
  2. Place flour, bicarbonate of soda, cinnamon, mixed spice and ground ginger in mixing bowl then mix 5 sec/speed 4.
  3. Add butter and chop Turbo/2.0 sec/2 times. Transfer to a bowl and set aside.
  4. Place root ginger, crystalised ginger and sugar in mixing bowl then grind 4 sec/speed 10. Scrape down sides of mixing bowl with spatula.
  5. Add evaporated milk, golden syrup and treacle then heat 2 min/50°C/speed 2.
