Sticky Toffee Sponge Cake

Ingrediënten

- dark brown sugar
- double cream
- margarine
- light brown muscovado sugar
- self-raising flour
- large eggs
- baking powder
- natural vanilla extract

Bereidingswijze
- Place butter, sugar and cream in mixing bowl then cook 8 min/120°C/speed 2. Transfer to a heat-proof jug and set aside to cool completely. Meanwhile, clean mixing bowl and make sponge.
- Preheat oven to 170°C. Grease and line base of 2 loose-based cake tins (Ø 20 cm) with baking paper.
- Place margarine and sugar in mixing bowl then cream 30 sec/speed 4. Scrape down sides of mixing bowl with spatula then cream again 20 sec/speed 4. Scrape down sides of mixing bowl with spatula.
- Add flour, eggs, baking powder and vanilla extract then mix 45 sec/speed 4. Finish mixing by hand with spatula if necessary then divide evenly between prepared tins. Bake for 25-30 minutes (170°C) until a skewer inserted in centre comes out clean. Leave to cool in tins for 5 minutes before removing to a wire rack to cool completely. Meanwhile, clean mixing bowl and make icing.
- Place butter, sugar and 120 g cooled toffee sauce in mixing bowl then mix 30 sec/speed 4. Scrape down sides of mixing bowl with spatula then mix again 30 sec/speed 4.
