Ingredients

  • pistachio nuts, shelled, unsalted
  • cream, min. 30% fat
  • egg
  • sugar
  • fresh strawberries
  • freshly squeezed lemon juice
  • white chocolate
  • fresh peppermint

Instructions

  1. Place pistachios in mixing bowl and chop 2 sec/speed 7. Transfer to a bowl and set aside.
  2. Insert butterfly whisk. Place egg and sugar in mixing bowl then whisk 2 min/speed 3. Remove butterfly whisk and transfer whipped eggs to bowl with whipped cream. Add ⅓ reserved pistachios then incorporate carefully with spatula. Distribute mixture between holes of Thermomix® Nester. Rinse mixing bowl.
  3. Place strawberries and lemon juice in mixing bowl then mix 20 sec/speed 5. Transfer to another bowl. Add 2 tbsp strawberry puree to each hole of Thermomix® Nester then swirl using a fork. Place in freezer for 2 hours. Reserve remaining strawberry puree for later use. Clean mixing bowl. At the end of freezing time, continue with recipe.
  4. Place white chocolate in mixing bowl, chop 3 sec/speed 7 then melt 4 min/50°C/speed 1.5. Remove Thermomix® Nester from freezer, cover each hole with white chocolate then sprinkle with ½ remaining pistachios. Return to freezer for a further 2-3 hours.
