Ingredients

  • pistachio nuts, unsalted, shelled
  • whipping cream
  • medium egg
  • caster sugar
  • strawberries
  • freshly squeezed lemon juice
  • white chocolate
  • fresh mint leaves

Instructions

  1. Place pistachios in mixing bowl and chop 2 sec/speed 7. Transfer to a bowl and set aside.
  2. Insert butterfly whisk. Place cream in mixing bowl and whip 45 sec/speed 3. If necessary, whip again without setting a time speed 3, stopping the motor and checking every 10 seconds until soft peaks form, avoiding over-whipping. Transfer cream to another bowl and set aside.
  3. Place egg and sugar in mixing bowl then whisk 2 min/speed 3. Remove butterfly whisk and transfer whipped eggs to bowl with cream. Add ⅓ reserved pistachios to cream mixture and gently mix with spatula. Divide mixture between holes of Thermomix® Nester. Clean mixing bowl.
  4. Place strawberries and lemon juice in mixing bowl then chop 20 sec/speed 5. Transfer 2 Tbsp strawberry purée to each hole of Nester, reserving remaining strawberry purée in fridge. Place Nester in freezer for 2 hours. Meanwhile, clean and dry mixing bowl.
  5. After freezing time, place chocolate in mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula then melt 4 min/50°C/speed 1.5. Remove Nester from freezer, cover each hole with melted chocolate then sprinkle with ½ remaining pistachios. Return to freezer for a further 2-3 hours.
