Ingredients

  • shelled unsalted pistachio nuts
  • pouring (whipping) cream
  • egg white
  • caster sugar
  • strawberry
  • freshly squeezed lemon juice
  • white chocolate

Instructions

  1. Place pistachios into mixing bowl and chop 2 sec/speed 7. Transfer to a bowl and set aside.
  2. Insert butterfly whisk. Place cream into mixing bowl and whip 45 sec/speed 3, until soft peaks form. If necessary, whip again without setting a time speed 3, until soft peaks form, stopping every 10 seconds to check and avoid overwhipping. Transfer cream to a separate bowl and set aside.
  3. Place egg white and sugar into mixing bowl then whisk 2 min/37°C/speed 3. Remove butterfly whisk and transfer mixture to bowl with cream. Add ⅓ reserved pistachios to cream mixture and gently mix with spatula. Divide mixture between holes of Thermomix® Nester. Clean and dry mixing bowl.
  4. Place strawberries and lemon juice into mixing bowl, then mix 20 sec/speed 5. Transfer 1 tablespoon strawberry purée to each hole of Nester, reserving remaining strawberry purée. Place Nester in freezer for 1.5 hours. Clean and dry mixing bowl. At the end of freezing time, continue with the recipe.
  5. Place chocolate into mixing bowl and chop 3 sec/speed 7, then melt 4 min/50°C/speed 1.5. Remove Nester from freezer, cover each hole with melted chocolate then sprinkle with ½ remaining pistachios. Return to freezer for a further 2-3 hours.
