Ingrediënten

  • chestnut mushrooms
  • olive oil
  • manchego cheese
  • bread, day old
  • spring onions
  • garlic cloves
  • fresh flat-leaf parsley
  • ground cayenne pepper
  • dried oregano
  • fine sea salt

Bereidingswijze

  1. Preheat oven to 180°C. Line a casserole dish (30 cm x 24 cm x 6 cm) with baking paper and set aside.
  2. Place manchego or Cheddar cheese and bread in mixing bowl then grate 8 sec/speed 9. Transfer into a bowl and set aside.
  3. Place spring onions/shallots, garlic, parsley and 70 g reserved mushroom stalks in mixing bowl then chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  4. Add 20 g olive oil and sauté 2 min/120°C/speed 1.
  5. Add all remaining ingredients, including reserved cheese and breadcrumb mixture, then combine 3 sec//speed 3.
