Sultana and Cranberry Rolls

- sultanas
- oranges
- orange liqueur (optional)
- lemon
- sugar
- milk
- dried instant yeast
- medium egg
- fine sea salt
Bereidingswijze
- The next day, place lemon peel and 40 g sugar in mixing bowl then grind 15 sec/speed 10. Transfer to a bowl and set aside.
- Place milk and yeast in mixing bowl then warm 2 min/37°C/speed 0.5. Meanwhile, grease a large bowl and line a deep baking tray (approx. 24 cm x 24 cm x 4 cm) with baking paper.
- Add reserved lemon sugar mixture, egg, salt, cinnamon, mixed spice, nutmeg, butter and flour then mix 5 sec/speed 5. Knead Dough /2 min. Transfer to prepared bowl and leave to rise in a warm place until doubled in size (approx. 1 hour). Clean and dry mixing bowl.
- Place 60 g sugar and cinnamon in mixing bowl then grind 10 sec/speed 10.
- Add butter and blend 10 sec/speed 10.
