Ingrediënten
- sweet potatoes
- olive oil
- ground ginger
- ground cinnamon
- ground cumin
- fine sea salt
- ground black pepper
- garlic clove
- fresh root ginger
- red chilli
Bereidingswijze
- Preheat oven to 200°C.
- Place a large bowl on mixing bowl lid then weigh in sweet potatoes and 20 g oil. Remove bowl from lid then add cumin, cinnamon, salt, ground ginger and pepper then stir to coat. Arrange on a large baking tray in a single layer then bake for 30-35 minutes (200°C) until browned. Meanwhile, make dressing.
- Place fresh ginger, garlic and chilli in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Add dates, cashew butter, lime juice, tamari and vinegar then mix 10 sec/speed 5. Scrape down sides and lid of mixing bowl with spatula then mix again 10 sec/speed 5. Scrape down sides and lid of mixing bowl with spatula.
- Add cabbage and chop 4 sec/speed 4. Transfer to a large bowl and set aside.
