Ingrediënten

  • walnut, halved
  • ghee
  • cooking apples
  • caster sugar
  • ground cinnamon
  • double cream
  • maple syrup
  • baguette

Bereidingswijze

  1. Place walnuts in mixing bowl and chop 4 sec/speed 4. Transfer to a frying pan and toast on medium heat until golden brown. Set aside and leave to cool.
  2. Insert butterfly whisk. Place cream in mixing bowl and whip 4 min/speed 4 until buttermilk separates (see tip). Remove butterfly whisk. Strain contents of mixing bowl through simmering basket, set over a large bowl, separating butter from buttermilk (see tips) and reserving both. Rinse butter under cold water, using spatula to strain the liquid.
  3. Place butter, maple syrup and remaining ½ tsp cinnamon then mix 10 sec/speed 5. If there is any liquid left, drain through simmering basket again.
  4. Transfer butter to a wooden chopping board. Spread butter with a spoon, forming hollows and wells, preferably with a raised edge. Garnish with sautéed apples and roasted walnuts then drizzle with maple syrup. Serve with baguette or freshly baked bread.
