Ingrediënten
- sugar
- unsalted butter
- plain flour
- medium egg
- cocoa powder, unsweetened
- baking powder
- fine sea salt
- water
- sweet potato
- egg yolks
Bereidingswijze
- Place sugar in mixing bowl and grind 15 sec/speed 10. Scrape down sides of mixing bowl with spatula.
- Add butter, flour, 1 egg, cocoa powder, baking powder and salt then mix 20 sec/speed 4. Transfer dough to a work surface, shape into a ball, wrap in reusable wrap or cling film and refrigerate for approx. 30 minutes. Meanwhile, continue with recipe.
- Place water in mixing bowl. Set Varoma dish in position and weigh sweet potatoes into it. Cover Varoma and steam 25 min/Varoma/speed 1. Set Varoma aside. Empty and clean mixing bowl.
- Preheat oven to 170°C. Line a baking tin (approx. 30 cm x 20 cm) with baking paper and set aside.
- Place egg yolks, ricotta, cream cheese, 80-100 g condensed milk, 10 g cornflour and vanilla extract in mixing bowl then mix 20 sec/speed 6. Scrape down sides of mixing bowl with spatula then mix again 10 sec/speed 6. Pour mixture over dough base.
