Ingrediënten

  • medium eggs
  • fine sea salt
  • milk
  • sugar
  • plain flour
  • vanilla sugar, homemade
  • grated lemon zest
  • unsalted butter
  • raisins
  • icing sugar

Bereidingswijze

  1. Preheat oven to 180°C (top and bottom heat). Separate the eggs.
  2. Insert butterfly whisk (see tip). Place egg whites and salt in mixing bowl and whisk 6 min/speed 3.5 until stiff. Remove butterfly whisk then transfer to a bowl and set aside.
  3. Place milk, sugar, flour, reserved egg yolks, vanilla sugar and lemon zest in mixing bowl then mix 30 sec/speed 4.
  4. Add reserved whisked egg whites and fold in 20 sec/speed 3. Scrape down sides of mixing bowl with spatula then fold in again 20 sec/speed 3.
  5. Heat an oven-proof frying pan (see tip) on the hob. Melt butter in it, pour in batter, sprinkle with raisins and fry over a medium heat for approx. 3 minutes until golden brown. Divide into four and turn each piece over, then cook the other side. Finish baking in the oven for 5 minutes (180°C). Tear pancakes into small pieces with two forks, sprinkle with icing sugar and serve.
