Ingrediënten

  • onions
  • fresh root ginger
  • garlic clove
  • fresh jalapeño chilli
  • ripe mango
  • tamarind paste
  • treacle
  • ground allspice
  • red wine
  • orange juice

Bereidingswijze

  1. Light barbecue or preheat grill (220°C).
  2. Place onions, ginger, garlic and chilli in mixing bowl then chop 3 sec/speed 7.
  3. Add mango, tamarind paste, treacle, allspice, red wine and orange juice then cook 25 min/98°C/speed . Scrape down sides of mixing bowl with spatula.
  4. Add vinegar and, without measuring cup, cook 10 min/100°C/speed . Insert measuring cup then blend 1 min/speed 10.
  5. Grill for 5-8 minutes (220°C), occasionally turning and brushing with tamarind and mango sauce. Serve immediately or keep warm.
