Timatar Wali Macchi (Cod in Tomato Sauce)

Ingrediënten
- cod fillets
- fine sea salt
- cayenne pepper
- ground turmeric
- vegetable oil
- dried fennel seeds
- black mustard seeds
- onions
- garlic cloves
- tinned chopped tomatoes
Bereidingswijze
- Place cod fillets on a plate and season with ¼ tsp salt, ¼ tsp cayenne pepper and ¼ tsp turmeric. Rub in well then set aside for 30 minutes while preparing sauce.
- Place oil, fennel seeds and mustard seeds in mixing bowl then sauté 5 min/120°C/speed 1.
- Add onions and garlic then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula then sauté 6 min/100°C/speed 1. Meanwhile, preheat oven to 180°C.
- Add tinned tomatoes, cumin, garam masala, remaining 1 tsp salt and remaining ¼ tsp cayenne pepper then cook 15 min/98°C/speed 0.5. Towards the end of this time, heat 1-2 Tbsp oil in a frying pan over a high heat and lightly brown fish fillets for 1-2 minutes on each side.
- Transfer browned fish fillets to a baking dish and pour over tomato sauce. Bake for 14-16 minutes (180°C) until fish is cooked. Serve immediately.
