Ingrediënten

  • potatoes
  • medium eggs
  • turkey breast fillets, skinless
  • fine sea salt
  • ground black pepper
  • olive oil
  • carrots
  • onion
  • white wine
  • dried bay leaves

Bereidingswijze

  1. Place browned turkey, carrots, onion, wine, bay leaves and water in mixing bowl then cook with lid  Open Cooking/40 min/100°C. Transfer turkey to a serving plate using tongs and set aside.
  2. Place Varoma in position and steam 30 min/Varoma/speed 2. Meanwhile, cut turkey in slices (2 cm). Set Varoma aside. Transfer potatoes to a serving bowl then add olives. Using a slotted spoon, transfer eggs to simmering basket and hold under cold, running water to stop the cooking process. Slice eggs into rounds (1 cm) then add to bowl with potatoes and mix well. Remove bay leaves from mixing bowl then blend 30 sec/speed 6. Transfer broth to a jug then set aside.
  3. Place anchovies, gherkins, tuna and 120 g reserved broth in mixing bowl then mix 30 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  4. Add crème fraîche, salt and ground pepper then mix 20 sec/speed 3. Serve turkey with prepared potatoes and eggs, with sauce poured on top.
