Twice-Baked Watercress, Goat's Cheese and Hazelnut Soufflé

Ingrediënten
- hard goat's cheese
- blanched hazelnuts
- unsalted butter
- plain flour
- milk
- English mustard
- medium eggs
- watercress
- fine sea salt
- water
Bereidingswijze
- Place 25 g goat's cheese in mixing bowl and grate 5 sec/speed 8. Transfer to a bowl and set aside.
- Place hazelnuts in mixing bowl and toast 5 min/120°C/speed 1. Chop 5 sec/speed 5 then transfer to a bowl and set aside.
- Place butter, flour and milk in mixing bowl then cook 6 min/90°C/speed 4. Remove lid and set bowl aside to cool for 10 minutes. Meanwhile, preheat oven to 180°C and generously butter 8 individual ramekins (Ø 8 cm).
- Add mustard and egg yolks then beat 1 min/speed 4. Scrape down sides of mixing bowl with spatula.
- Add remaining 150 g goat's cheese, watercress, reserved chopped hazelnuts and salt then stir 1 min/speed 2. Transfer to a large bowl and set aside. Thoroughly clean and dry mixing bowl.
