Ingrediënten

  • white chocolate
  • double cream
  • vanilla pod
  • sugar
  • unsalted butter
  • cream, min. 30% fat
  • water
  • lemon juice
  • puff pastry
  • white vinegar

Bereidingswijze

  1. Place white chocolate in mixing bowl and grate 10 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  2. Add cream and vanilla then cook 4 min/100°C/speed 2.
  3. Preheat oven to 180°C. Line a baking tray with baking paper.
  4. Place sugar, butter, 70 g cream, 30 g water and lemon juice in mixing bowl then start Sugar Stages . Meanwhile, roll out puff pastry into a rectangle using a rolling pin, cut into 4 strips (26 cm x 7 cm), and place on prepared baking tray. Cover with a second sheet of baking paper, then place a second baking tray on top to keep the puff pastry thin during baking. Bake for 25 minutes (180°C). Remove from oven and leave puff pastry to cool completely. Meanwhile, continue with recipe.
  5. Add remaining 130 g cream and mix 2 min/speed  then cook 3 min/120°C/speed 2. Transfer to a heat-proof bowl and leave to cool.
