Vanilla White Wine Pears with Almond Crumble

Ingrediënten
- flaked almonds
- unsalted butter
- sugar
- coconut flour
- milk
- egg yolks
- sugar
- fresh bay leaves
- water
- white wine, dry
Bereidingswijze
- Preheat oven to 180°C. Line a baking tray with baking paper and set aside.
- Place almonds, butter, sugar and flour in mixing bowl then mix 8 sec/speed 5. Transfer to prepared baking tray and bake for 8-10 minutes (180°C) until lightly golden. Meanwhile, continue with recipe. Clean mixing bowl.
- Place milk, egg yolks, sugar and bay leaves in mixing bowl then start Thicken /80°C. Strain through a fine-mesh sieve into a bowl and cover with cling film, carefully pressing so it touches the surface then allow to cool. Meanwhile, continue with recipe. Clean mixing bowl.
- Place water, wine, amaretto, sugar, star anise and vanilla in mixing bowl. Add pears and start Open Cooking/30 min/100°C, every 10 minutes stir gently with spatula, including base of mixing bowl. Carefully remove pears with tongs and transfer to a plate. Remove vanilla pod and star anise and transfer remaining contents of mixing bowl into a jug.
- Place 250 g wine mixture and brown sugar in mixing bowl then cook 15 min/120°C/speed 2. Transfer syrup to a jar and set aside (see tip).
