Vegan Aubergine Massaman Curry
This rich Vegan Aubergine Massaman Curry combines tender aubergine and mushrooms in creamy coconut milk with authentic Thai flavours, perfectly prepared in the Thermomix TM7 with minimal effort.

Ingrediënten

Bereidingswijze
- Place onions, peanuts and chilli in mixing bowl then chop 5 sec/speed 6. Scrape down sides of mixing bowl with spatula.
- Add oil and sauté 3 min/120°C/speed 1. Meanwhile, line Varoma tray with baking paper, overlapping 2 cm up the sides, ensuring some holes remain uncovered for steam to circulate.
- Add lemon juice and water then place Varoma dish into position. Insert prepared Varoma tray and weigh in aubergine. Drizzle with remaining 2 Tbsp oil and season with salt, then steam 22 min/Varoma//speed 1. Set Varoma aside, transfer steamed aubergine to a serving bowl and keep warm.
- Add stock paste, cornflour, curry paste, coconut milk, agave syrup, chickpeas, green beans, mushrooms and remaining 1 tsp salt then cook 8 min/80°C//speed . Transfer to serving bowl with reserved aubergine and mix well with spatula. Garnish with fresh coriander and serve immediately with rice or naan bread, for example.
