Ingrediënten

  • caster sugar
  • lemons
  • cornflour
  • coconut cream
  • freshly squeezed lemon juice
  • yellow food colouring (optional)
  • vegan butter
  • 00 flour
  • water
  • vanilla bean paste

Bereidingswijze

  1. Place sugar and lemon peel in mixing bowl then grate 10 sec/speed 10. Scrape down sides of mixing bowl with spatula then grate again 10 sec/speed 10. Scrape down sides of mixing bowl with spatula.
  2. Add cornflour, coconut cream, lemon juice and food colouring (if using) then mix 10 sec/speed 6. Scrape down sides of mixing bowl with spatula then, with simmering basket in place of measuring cup, cook 12 min/120°C/speed 1. Transfer to a bowl and set aside to cool completely.
  3. Place butter, flour, water, vanilla bean paste and salt in mixing bowl then mix 20 sec/speed 6. Tip out onto a lightly-floured surface, shape into a ball and flatten into a rough square. Wrap in reusable wrap or cling film and refrigerate for 20 minutes.
  4. Preheat oven to 200°C and line 2 large baking trays with silicone baking mats or baking paper.
  5. On a lightly-floured surface, roll out dough to a long rectangle 3 times as long as it is wide (approx. 60 cm x 20 cm). Fold bottom third up to cover middle third and top third down over this. Seal edges then give dough a quarter turn so that the fold is on the left. Repeat rolling and folding process twice, wrap in reusable wrap or cling film and refrigerate for 30 minutes.
