Vegan Mango and Coconut Panna Cotta with Oat Crumble

Ingrediënten
- rolled oats
- olive oil
- fine sea salt
- tinned coconut milk
- granulated sugar
- agar agar flakes
- mangoes
Bereidingswijze
- Preheat oven to 160°C.
- Place oats, oil and ¼ tsp salt in mixing bowl then mix 20 sec/speed 3. Transfer to a baking tray and bake for 10 minutes (160°C) or until golden. Transfer to a bowl and set aside to cool completely. Meanwhile, clean mixing bowl and continue with recipe.
- Place coconut milk, sugar, ¼ tsp salt and 1 tsp agar in mixing bowl then heat 7 min/100°C/speed 2.5. Blend 45 sec/speed 8. Transfer mixture to a loaf tin (900 g/2 lb, see tip).
- Without cleaning mixing bowl, place mangoes, remaining 1 tsp agar and remaining ¼ tsp salt in mixing bowl then blend 10 sec/speed 5. Scrape down sides of mixing bowl with spatula then heat 7 min/100°C/speed 2.5. Blend 45 sec/speed 8. Pour mango mixture onto coconut mixture, mix gently with a spoon to create a marbled pattern, then chill in fridge until set (approx. 2 hours).
