Ingrediënten

  • bulgur wheat
  • raisins (optional)
  • water
  • fine sea salt
  • ras el hanout2
  • fresh coriander leaves
  • fresh parsley leaves
  • garlic cloves
  • onions
  • olive oil

Bereidingswijze

  1. Place coriander and parsley in mixing bowl then chop 7 sec/speed 8. Transfer to a bowl and set aside.
  2. Place garlic and onions in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  3. Add oil and 4 tsp ras el hanout then cook 5 min/120°C//speed .
  4. Add tomatoes, sweet potatoes, carrots, radish, beans, 500 g water, vegetable stock, salt and pepper. Place soaked bulgur in Varoma dish, making sure that some holes remain uncovered to allow steam to circulate. Place covered Varoma into position and cook 15 min/Varoma//speed . Meanwhile, rinse chickpeas using simmering basket. Set Varoma aside.
  5. Add courgettes, rinsed chickpeas and chopped herbs (reserving 2 Tbsp for garnishing) to mixing bowl then mix well with spatula. Place covered Varoma back into position and cook for a further 15 min/Varoma//speed . Remove Varoma.
