Ingrediënten

  • water
  • buckwheat grains
  • porridge oats
  • mixed seeds
  • Parmesan cheese
  • courgette
  • onion
  • carrot
  • garlic clove
  • fresh basil leaves

Bereidingswijze

  1. Place water in mixing bowl. Insert simmering basket, weigh in buckwheat and cook 30 min/100°C/speed 4. Remove simmering basket with aid of spatula then hold under cold, running water to stop the cooking process. Clean and dry mixing bowl.
  2. Place oats, seeds and Parmesan in mixing bowl then grate 10 sec/speed 10. Transfer to bowl with buckwheat and set aside.
  3. Place courgette, onion, carrot, garlic, basil, parsley, smoked paprika (if using) and salt in mixing bowl then chop 5 sec/speed 7. Scrape down sides of mixing bowl with spatula.
  4. Add breadcrumbs and reserved buckwheat mixture then mix 10 sec//speed 4. Transfer to a bowl then divide and shape mixture into equal-sized medallions (approx. |5-6 cm, see tip).
  5. Heat oil in a large non-stick frying pan over medium heat and fry medallions for 4-5 minutes on each side or until golden brown. Serve immediately (see tip).
