Ingrediënten

  • water
  • dried instant yeast
  • honey
  • wholemeal flour
  • plain flour
  • fine sea salt
  • egg yolk
  • nigella seeds

Bereidingswijze

  1. Place 350 g water, yeast and honey in mixing bowl, then warm 2 min/40°C/speed 1.
  2. Add wholemeal flour, plain flour and salt, then knead Dough /5 min. Meanwhile, line 2 baking trays with baking paper and sprinkle generously with 2-3 Tbsp plain flour. Sprinkle flour on work surface and flour your hands. Transfer dough to floured surface, halve and shape each into a ball. Place dough balls on prepared trays and cover with damp tea towels. Leave to rest in a warm place until doubled in size (approx. 45 minutes).
  3. Flour your hands and generously sprinkle first ball of dough with flour (approx. 2-3 Tbsp) so it does not stick to the paper. Press dough with the palms of your hands into a flat disc (approx. Ø 22 cm). Repeat with second ball of dough, then cover both pitta breads with a damp tea towel and leave to prove in a warm place until doubled in size (1-2 hours).
  4. Preheat oven to 240°C (top and bottom setting without fan).
  5. Whisk 2 tsp water and egg yolk in a bowl. Using a pastry brush, gently brush 1 pitta with half the egg mixture. Using your pinky fingers, make 4-5 parallel lines on top of pitta leaving 1-2 cm between each line. Rotate baking tray 90° and repeat to form a grid pattern on pitta. Sprinkle with ½ tsp nigella seeds.
