Egg Salad in Crispy Easter Nests

Ingrediënten
- large eggs
- water
- unsalted butter
- all-purpose flour
- olive oil
- water
- salt
- fresh parsley
- shallot
- sour cream
Bereidingswijze
- Preheat oven to 400°F. Line a baking sheet with parchment and grease a 12-hole muffin pan. Set aside.
- Place flour, oil, water and salt into mixing bowl, insert measuring cup (TM6 only) and knead Dough /1 min. Transfer dough to a floured work surface and roll out into a square (16 in. x 16 in.) using a rolling pin. Using a knife, cut dough into 12 squares (3.5 in. x 3.5 in.) and line each hole of prepared muffin pan with 1 dough square. Using the bottom of a glass, press dough into muffin hole and prick the bottom of the dough with a fork (see Tip). Bake 12 minutes (400°F) or until golden brown. Meanwhile, gather remaining dough, roll out thinly (approx. ¼ inch thick) and cut out 24 bunny ear shaped pieces. Pinch the tips of dough to shape like ears and place on prepared baking sheet. Bake 10 minutes (400°F) or until golden brown. Allow to cool completely.
- Place parsley and shallots into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Add reserved boiled eggs, sour cream, mustard, mayonnaise, vinegar, salt and pepper and mix 15 sec/speed 3. Divide egg salad among baked Easter Nests, place two prepared ears on top and use chives to create bunny whiskers. Serve immediately or refrigerate to chill until needed.
